From Happy Accident to Cult Pastry
The Franzbrötchen has been part of Hamburg’s food culture since the 19th century. There are several theories about its origins.
It probably developed from an old type of bread called “Franzbrot”. It was a long, fine loaf that resembled a baguette. According to one theory, a Hamburg baker fried this bread in a pan with fat. Over time, this is said to have developed into the cinnamon pastry known today as the Franzbrötchen.
Another clue points to the “Franz’scher Bäcker” bakery in Altona. Its bakery was already offering a pastry called “Franzschbrod” in the early 19th century. It may have been an early version of today’s Franzbrötchen.
